It all began with a health journey.

I’m Carissa, graphic designer by trade, carb lover by birth, and the human behind NoFo SoDough. Eight years ago, I was diagnosed with Hashimoto’s. And let me tell you… my thyroid did not love the carb and gluten party I was throwing. What followed was a blur of inflammation, bloating, weight gain, and every “diet” trend Pinterest ever offered.

But spoiler alert: I missed bread. Real bread. Soul-warming, crust-cracking, flour-dusted bread. So I got to work… researching, testing, and eventually falling head over heels with traditional sourdough. The kind made with organic flour, filtered water, natural fermentation, and a whole lotta patience.

NoFo SoDough was born out of necessity, curiosity, and, let’s be honest, a serious craving. It’s my way of reclaiming comfort food without the crash, and sharing it with others who are navigating their own gluten-friendly, anti-inflammatory, or just generally feel-better journeys.
